Creamy Jack Mushroom and Onion Soup
8 cbeef broth
2 largeonions thinly sliced
8 ozfresh mushrooms diced
1 cheavy cream
2 cshredded monterey jack cheese
·salt and pepper to taste
How to Make Creamy Jack Mushroom and Onion Soup
- Add beef broth to large Dutch oven. Bring to a boil. Add onions and reduce to a simmer and simmer on med low for 30 minutes. Add mushrooms and simmer 15 more minutes.
- Mix flour with water and add to soup to thicken. Cook about 5 minutes. Add heavy cream and bring back to a boil. Reduce to simmer and simmer 5 more minutes.
- Add 1 1/2 cup cheese and stir until melted. Add salt and pepper to taste. Serve top with remaining cheese.
