1-1/2 Tbspolive oil
1 mediumonion, chopped
2heads broccoli, chopped
1head cauliflower, chopped
2 clovegarlic, chopped
1 can(s)(14.5oz0 chicken broth
2 pkgbroccoli soup mix (from produce department)
2 Tbspbutter (optional)
·salt, pepper to taste
How to Make CREAM OF BROCCOLI AND CAULIFLOWER SOUP
- Saute onion in olive oil.
Add broth, broccoli, cauliflower, and garlic.
Lower heat, cover, and cook until tender.
- Puree in blender in batches usig milk as needed.
Pour back into pot.
- Add packets of soup mix, butter, and rest of milk.
Adjust thickness of coup to taste with milk.
Add butter (optional).
- Cook on low for 20 minutes.
Season to taste.
