Ingredients

1-1/2 Tbsp
olive oil
1 medium
onion, chopped
2
heads broccoli, chopped
1
head cauliflower, chopped
2 clove
garlic, chopped
1 can(s)
(14.5oz0 chicken broth
2 pkg
broccoli soup mix (from produce department)
3-4 c
milk
2 Tbsp
butter (optional)
salt, pepper to taste

How to Make CREAM OF BROCCOLI AND CAULIFLOWER SOUP

Step-by-Step

  • 1Saute onion in olive oil.
    Add broth, broccoli, cauliflower, and garlic.
    Lower heat, cover, and cook until tender.
    Cool slightly.
  • 2Puree in blender in batches usig milk as needed.
    Pour back into pot.
  • 3Add packets of soup mix, butter, and rest of milk.
    Adjust thickness of coup to taste with milk.
    Add butter (optional).
  • 4Cook on low for 20 minutes.
    Season to taste.
