I've been on the lookout for a 'traditional' oyster stew recipe to make for Christmas Eve. I think this is it! Prep time is next to nothing if you buy your oysters already shucked!

Ingredients

  • 1 pint oysters, with liquid
  • 8 tablespoons unsalted butter (1 stick)
  • 1/2 cup shallots, minced
  • 1 cup light cream
  • 3 cups whole milk
  • 1/2 teaspoon salt
  • to taste - cayenne pepper
  • additional - butter for serving

How To Make down home southern oyster stew

  • Step 1
    Saute shallots in butter.
  • Step 2
    Add milk and cream, and simmer until almost boiling.
  • Step 3
    Season with salt and pepper.
  • Step 4
    Add oysters and liquid. Simmer until edges curl.
  • Step 5
    Serve in individual bowls with a pat of butter on top.
