conch chowder
I got this recipe when I was in Bermuda. It was good--different than any chowders I've ever had. Conch (pronounced "Conk") is tough, but chopped up makes it so tasty.

Ingredients
- 2 - large conchs
- 1 pound potatoes
- 1/4 pound salt pork
- 2 - medium onions
- 1 - bell pepper
- 1 - small can of tomatoes
- 1 - small can tomato paste
- 1 cup hot water
- 1 - bay leaf
- 2 cloves garlic
- 1 tablespoon barbeque sauce
- 1/2 tablespoon poultry seasoning
- 1/2 teaspoon black pepper
- 3/4 teaspoon salt
How To Make conch chowder

Step 1Saute onions, bell peppers and salt pork, all chopped fine, until well cooked. Add all other ingredients except conch and potatoes.

Step 2Pound conchs to break up tissue and chop into small pieces. Add to pot which should now be boiling. Cook for two hours over low fire. Add potatoes and cook until done.
