This 34 ingredient chili recipe is intense, and scaled here as a medium heat chili. I won a chili cook-off contest at Carl Albert State College in Poteau,OK last year in the "hot" division with virtually the same recipe. If you prefere "hot" chili like used in the chili cook-off, just add 1 more teas. of cayenne, 1 more medium jalapeno, and use the hot rotel instead. Be ready to "slap yo momma" after a few spoonfuls of this chili!

Ingredients

  • 2 pounds ground chuck
  • 1 pound ground breakfast sausage
  • 2 large onions, chopped
  • 1 large green bell pepper, cored, seeded & chopped
  • 1 large red bell pepper, cored, seeded & chopped
  • 2 stalks celery, chopped
  • 2 tablespoons garlic, minced
  • 3 (15oz.) cans rotel (regular)
  • 1 (6oz.) can tomato paste
  • 1 (8oz.) can tomato sauce
  • 8 ozs. - water
  • 2 - beef bouillon cubes
  • 1 can beer
  • 3 tablespoons mexene chili powder
  • 1/2 cup dried chives
  • 2 tablespoons lea & perrin worcestershire sauce
  • 2 tablespoons granulated or powdered garlic
  • 2 teaspoons granulated or powdered onion
  • 2 teaspoons powdered cayenne pepper
  • 1 teaspoon cajun seasoning ( zatarain's or tony cacherie's)
  • 1 (15oz.) can red kidney beans
  • 1 (15oz.) can black beans
  • 1 (15oz.) can ranch style beans
  • 2 tablespoons real bacon bits (3 strips cooked)
  • 1 tablespoon mesa (roasted)
  • 1 tablespoon dried oregano
  • 1 teaspoon paprika (spanish style)
  • 2 teaspoons cumin
  • 4 - dried bay leaves
  • 2 medium jalapenos (cored, seeded & chopped small)
  • 1 teaspoon dried basil
  • 2 tablespoons strong coffee
  • - salt & pepper to taste

How To Make gonzo's big & bold chili

  • Step 1
    Put the ground chuck & sausage in a large cooking pot, then add Maxene chili powder, onions, green & red bell peppers, celery, garlic and jalapenos . Cook on medium-low, stirring occasionally until browned.
  • Step 2
    Add water, tomato paste, tomato sauce, beer & coffee. Stir, then allow 15 minutes to heat. Stir again, then add the rest of the ingredients.
  • Step 3
    Add a lid to the pot, continue to cook on medium low for 1 hour, stirring occasionally. (about every 15 minutes)
