easy crock-pot chicken chili

This is a recipe that you could easily augment with different beans, spices, tortilla strips, etc. My family just happens to like black beans, so I used those.

Ingredients

  • 1 pound ground chicken
  • 1 can rotel chili fixins (tomatoes with green chilis)
  • 3 cans black chili beans
  • 1 can corn
  • 1 can tomato puree (29 oz.)
  • 1 medium diced onion
  • 1 bottle chili sauce
  • 2 teaspoons chili powder
  • 2 teaspoons lawry's seasoned salt
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • - shredded reduced fat cheddar cheese (optional)
  • - tortilla chips (optional)

How To Make easy crock-pot chicken chili

  • Step 1
    Brown chicken (cooked with 1 tsp chili pepper, paprika, 1 tsp. cumin, and Lawry's seasoned salt) and drain. After draining, add the Rotel chili fixins and cook for 5 min.
  • Step 2
    Dump all other ingredients into crock-pot (lined for easy cleaning:) and add the chicken mixture. Add additional seasoning and stir. Cook on low for 5 hours.
  • Step 3
    I like to add tortilla strips and shredded cheese (everything's better with cheese:) to the finished product. Enjoy!
