Oh boy is this stew fantastic! specially with the cheesey garlic bread on top!!

Ingredients For mamma mia italian stew topped w/mozz garlic toast

  • 2 Tbsp
    butter
  • 1 Tbsp
    olive oil
  • 1 lg
    onion sliced
  • 2 clove
    garlic
  • 1/2 c
    dry white wine (optional)
  • 1 can
    chopped tomatoes with basil.oregano & garlic 14.5 oz
  • 2 1/2 c
    water
  • 3-4 c
    chicken stock
  • 2 lg
    boneless skinless chicken breast
  • 1 lg
    potato diced small
  • 1 box
    frozen thawed spinach
  • 1 can
    italian green beans or canellini beans (or both)
  • 1/2 c
    finely grated parm or more for thickening
  • EXTRA SEASONINGS FOR STEW.
  • garlic salt, oregano, & pepper
  • GARLIC TOAST
  • 6-8
    slices italian bread
  • butter
  • garlic powder
  • 1 c
    mozzarella cheese grated

How To Make mamma mia italian stew topped w/mozz garlic toast

    To a large pot melt butter and olive oil, add sliced onions cook till softened. Grate garlic and cook till fragrant about a minute. Add wine cook for another 2 minutes. Add the stock, water, chopped tomatoes and chicken breast.

    Poach chicken for about 20min on med high heat. Remove and cool. Add chopped potatoes to liquid cook on med for ten min. Chop or shred chicken and put in pot, taste for seasoning. Add garlic salt and a pinch of oregano and pepper if necessary.

    When seasoned to liking bring to boil then add vegetables and cook for another 5min. Add parmesan cheese till melted. Your stew is done. Serve with cheesy garlic toast on top!!

    GARLIC TOAST Butter 6 slices of italian bread sprinkle garlic powder and top with mozzarella cheese and toast in oven till cheese is bubbly.
