While visiting New Mexico we went to this little resteraunt for lunch and had the best chicken taco soup I ever had, so I tried to make it mine.

Slow Cooker Crock Pot


  • 4 medium
    chicken breasts
  • 4 c
    chicken broth
  • 2 c
    corn (fresh or frozen)
  • 1 large
    onion ( diced)
  • 1 small
    butternut squash ( diced)
  • 1 can(s)
    rotoli tomatos and chillies (14 1/2 oz)
  • 1 pkg
    taco seasoning
  • 2 small
    cloves galic (diced)
  • 1 dash(es)
  • 1 dash(es)
  • 1 tsp

How to Make Linda's Chicken Taco Soup


  1. Put everything in slow cooker stir set on low for 8 hrs.
  2. Before serving shred up chicken.
  3. Serve with corn chips or pita chips.
