While visiting New Mexico we went to this little resteraunt for lunch and had the best chicken taco soup I ever had, so I tried to make it mine.

Ingredients

  • 4 medium chicken breasts
  • 4 cups chicken broth
  • 2 cups corn (fresh or frozen)
  • 1 large onion ( diced)
  • 1 small butternut squash ( diced)
  • 1 can rotoli tomatos and chillies (14 1/2 oz)
  • 1 package taco seasoning
  • 2 small cloves galic (diced)
  • 1 dash salt
  • 1 dash pepper
  • 1 teaspoon cumin

How To Make linda's chicken taco soup

  • Step 1
    Put everything in slow cooker stir set on low for 8 hrs.
  • Step 2
    Before serving shred up chicken.
  • Step 3
    Serve with corn chips or pita chips.
