With a cold rain this weekend AND company coming I felt this "soup" would be fitting. And I was correct...it was devoured! It was so hearty and satisfying! This recipe makes enough that 8 adults had seconds! I had my bruschetta bites and this soup. A perfect start to the Easter weekend!

Ingredients

  • 2 tablespoons olive oil, extra virgin
  • 1 large onion, diced
  • 1 pound sweet italian sausage, scrambled
  • 1 pound roasted chicken breast, pulled meat, homemade or bought
  • 2 large cans diced tomatoes, with basil, oregano
  • 5 cups chicken stock
  • 2 cups water
  • 3 cans 14oz cannellini beans
  • 2 teaspoons salt and pepper
  • 2 teaspoons italian spices
  • 1 tablespoon sugar
  • 1 teaspoon basil dried
  • 1 bunch fresh spinach, roughly chopped, stems removed
  • 4-5 - fresh basil leaves
  • - grated parmesan cheese for garnish and thickening if desired

How To Make hearty italian zuppa!

  • Step 1
    In a large stock pot add olive oil and saute onion until translucent. Add a pinch of salt.
  • Step 2
    Scramble sweet sausage in until cooked.
  • Step 3
    Add tomatoes, chicken stock, water, spices, beans, sugar, fresh spinach, and fresh basil.
  • Step 4
    Transfer to crock pot and cook on high for 1 hour then low for another hour. Or if you prefer to keep it in the stock pot cook it for 2 hours on low simmer.
  • Step 5
    Garnish with parmesan cheese, and chopped fresh basil. Salt and pepper to taste. Serve with lightly buttered/garlic toasted baguette .
