Ingredients

2 Tbspolive oil, extra virgin
-
1 largeonion, diced
-
1 lbsweet italian sausage, scrambled
-
1 lbroasted chicken breast, pulled meat, homemade or bought
-
2 largecans diced tomatoes, with basil, oregano
-
5 cchicken stock
-
2 cwater
-
3 can(s)14oz cannellini beans
-
2 tspsalt and pepper
-
2 tspitalian spices
-
1 Tbspsugar
-
1 tspbasil dried
-
1 bunchfresh spinach, roughly chopped, stems removed
-
4-5fresh basil leaves
-
·grated parmesan cheese for garnish and thickening if desired
How to Make Hearty Italian Zuppa!
- In a large stock pot add olive oil and saute onion until translucent. Add a pinch of salt.
- Scramble sweet sausage in until cooked.
- Add tomatoes, chicken stock, water, spices, beans, sugar, fresh spinach, and fresh basil.
- Transfer to crock pot and cook on high for 1 hour then low for another hour. Or if you prefer to keep it in the stock pot cook it for 2 hours on low simmer.
- Garnish with parmesan cheese, and chopped fresh basil.
Salt and pepper to taste.
Serve with lightly buttered/garlic toasted baguette .
