Green Chile Chicken Stew

I am sure there are dozens of variations of this recipe, but it is so good one more won't hurt huh? My mother in law gave me a copy of this a couple of weeks ago. I don't know where she received it from. Really easy to fix and very easy to tweak to your own taste. Can be made on stove top or crock pot.

3 lb
chicken breast, cubed
3 c
chicken broth ( i used low sodium)
1 large
onion, diced
3-4 medium
yukon gold potatoes, diced ( any type will do)
2 large
carrots, sliced ( not real thin)
7 oz
green chiles( more if you like )
3 Tbsp
2 Tbsp
unsalted butter
1/2 tsp
black pepper
1 1/2 tsp
chili powder
3 clove
minced garlic
salt to taste

How to Make Green Chile Chicken Stew


  • 1Dice chicken, potatoes and onion about the same size. Carrots thin sliced. ( I used the pot I was cooking in) add evoo to pot and heat on medium, add chicken and cook until white. Add garlic to the pot and let cook about 2 minutes
  • 2Now throw everything else into the pot and let simmer until potatoes and carrots are tender ( yep that's how I done it)
  • 3If using the slow cooker/crock pot, just throw everything in and turn to low until potatoes are tender and chicken is done.
