green chile chicken stew
I am sure there are dozens of variations of this recipe, but it is so good one more won't hurt huh? My mother in law gave me a copy of this a couple of weeks ago. I don't know where she received it from. Really easy to fix and very easy to tweak to your own taste. Can be made on stove top or crock pot.

Ingredients
- 3 pounds chicken breast, cubed
- 3 cups chicken broth ( i used low sodium)
- 1 large onion, diced
- 3-4 medium yukon gold potatoes, diced ( any type will do)
- 2 large carrots, sliced ( not real thin)
- 7 ounces green chiles( more if you like )
- 3 tablespoons evoo
- 2 tablespoons unsalted butter
- 1/2 teaspoon black pepper
- 1 1/2 teaspoons chili powder
- 3 cloves minced garlic
- - salt to taste
How To Make green chile chicken stew

Step 1Dice chicken, potatoes and onion about the same size. Carrots thin sliced. ( I used the pot I was cooking in) add evoo to pot and heat on medium, add chicken and cook until white. Add garlic to the pot and let cook about 2 minutes

Step 2Now throw everything else into the pot and let simmer until potatoes and carrots are tender ( yep that's how I done it)

Step 3If using the slow cooker/crock pot, just throw everything in and turn to low until potatoes are tender and chicken is done.
