Garlic lemon soup with orzo

This soup is so flavorful. The lemon really gives it a wonderful taste.

Ingredients

1 Tbsp
olive oil
1 medium
onion diced
1 large
carrot thinly sliced.
5 clove
garlic
1/2 c
white wine
6 c
chicken broth
1 pkg
knorr's home-style chicken bouillon or 1 tbsp butter then bouillon chicken bouillon
1/2 c
orzo
1/2 large
lemon juice and zest
salt and pepper to taste
1 tsp
dried basil
1 Tbsp
fresh parsley minced
1 Tbsp
fresh tarragon chopped

Step-By-Step

1Squeeze the lemon juice and the zest into a bowl and set aside.
2In a large pot heat olive oil. Add the onions and garlic and saute until translucent. Add wine and deglaze the pan. Add carrots. cook until wine is almost all evaporated.
3Add chicken broth and bouillon. Season with salt and pepper to taste. Add orzo. Cook until orzo is tender.
4Add basil, parsley, and tarragon. Add lemon juice and zest and cook 1 minute.
