Ingredients

scraps and bones of chicken or turkey
3 pt
cold water
1 stalk(s)
celery, chopped
1 Tbsp
butter
2 Tbsp
flour, heaping
1
onion, sliced
1 pt
cold milk
salt and pepper

How to Make Cream Chicken (or Turkey) Soup

Step-by-Step

  • 1Combine scraps and bones with water, celery, onion, salt and pepper. Simmer slowly until reduced to about one quart.
  • 2Strain out the bones. Melt butter and stir in flour; stir in milk and boil until thickened. Add to the chicken broth just before serving. Season to taste.
