Ingredients

  • 1 cup small pasta
  • 1 tablespoon olive oil
  • 1 - small onion, diced
  • 1 clove garlic, minced (or 1/4 tsp. garlic powder)
  • 3/4 cup carrots, shredded or finlely chopped
  • 3/4 cup celery, finely sliced
  • 1 - chicken breast, cooked and chopped
  • 1 can cream of chicken soup
  • 5 cups chicken broth
  • 1 pinch dried parsley

How To Make chicken and pasta soup

  • Step 1
    Cook pasta until al dente, about 7 or 8 minutes. Drain.
  • Step 2
    Meanwhile, in a large pan, sauté onion, garlic, carrots and celery until crisp tender, about 8 minutes.
  • Step 3
    Add the rest of the ingredients, except the cooked pasta. Simmer until vegetables are tender, 45 - 60 minutes.
  • Step 4
    Add the pasta to the soup before serving and heat to serving temperature.
  • Step 5
    Can be frozen. Omit pasta if freezing and add when serving.
