  • 1 c
    small pasta
  • 1 Tbsp
    olive oil
  • 1
    small onion, diced
  • 1 clove
    garlic, minced (or 1/4 tsp. garlic powder)
  • 3/4 c
    carrots, shredded or finlely chopped
  • 3/4 c
    celery, finely sliced
  • 1
    chicken breast, cooked and chopped
  • 1 can(s)
    cream of chicken soup
  • 5 c
    chicken broth
  • 1 pinch
    dried parsley

How to Make Chicken and Pasta Soup


  1. Cook pasta until al dente, about 7 or 8 minutes. Drain.
  2. Meanwhile, in a large pan, sauté onion, garlic, carrots and celery until crisp tender, about 8 minutes.
  3. Add the rest of the ingredients, except the cooked pasta. Simmer until vegetables are tender, 45 - 60 minutes.
  4. Add the pasta to the soup before serving and heat to serving temperature.
  5. Can be frozen. Omit pasta if freezing and add when serving.
