This is a long time family favorite based on the famous minestrone soup served at a local restaurant. Delicious served with fresh Italian bread!

ground beef
1 Tbsp
olive oil, extra virgin
1 pkg
dry onion soup mix
2 can(s)
chicken broth
2 can(s)
veg all (mixed vegetables)
2 can(s)
tomatoes, canned italian-style and diced
1/4 c
orzo pasta, uncooked
parmesan cheese

How to Make Venus De Milo (Minestrone) Soup


  • 1In a large soup pot brown ground beef in olive oil, breaking up into small pieces.
  • 2Add onion soup mix and mix well.
  • 3Add all canned ingredients, including the liquids, and bring to a boil.
  • 4Add orzo and reduce heat. Simmer for 20 minutes (until orzo is cooked through).
  • 5Serve with grated parmesan cheese.
