Venus De Milo (Minestrone) Soup

This is a long time family favorite based on the famous minestrone soup served at a local restaurant. Delicious served with fresh Italian bread!

1 lb
ground beef
1 Tbsp
olive oil, extra virgin
1 pkg
dry onion soup mix
2 can(s)
chicken broth
2 can(s)
veg all (mixed vegetables)
2 can(s)
tomatoes, canned italian-style and diced
1/4 c
orzo pasta, uncooked
parmesan cheese


1In a large soup pot brown ground beef in olive oil, breaking up into small pieces.
2Add onion soup mix and mix well.
3Add all canned ingredients, including the liquids, and bring to a boil.
4Add orzo and reduce heat. Simmer for 20 minutes (until orzo is cooked through).
5Serve with grated parmesan cheese.
