This is a long time family favorite based on the famous minestrone soup served at a local restaurant. Delicious served with fresh Italian bread!

  • 1 lb
    ground beef
  • 1 Tbsp
    olive oil, extra virgin
  • 1 pkg
    dry onion soup mix
  • 2 can(s)
    chicken broth
  • 2 can(s)
    veg all (mixed vegetables)
  • 2 can(s)
    tomatoes, canned italian-style and diced
  • 1/4 c
    orzo pasta, uncooked
  • ·
    parmesan cheese

How to Make Venus De Milo (Minestrone) Soup


  1. In a large soup pot brown ground beef in olive oil, breaking up into small pieces.
  2. Add onion soup mix and mix well.
  3. Add all canned ingredients, including the liquids, and bring to a boil.
  4. Add orzo and reduce heat. Simmer for 20 minutes (until orzo is cooked through).
  5. Serve with grated parmesan cheese.
