Was at my daughters and decided to make her a soup. None of my soups are the same. I got inspired by some freezer leftovers and 3/4lb ground beef that needed to be cooked. A hearty soup with just a slight kick. Husband and kids said this was by far the best soup ever!

Ingredients

  • 3/4 pound ground beef
  • 1 large chopped onion
  • 3 - long banana peppers chopped
  • 2 cloves garlic chopped
  • 1 cup beef gravy
  • 1 package envelope beefy onion soup mix
  • 4-5 cups water
  • - s&p to taste
  • 3 large cheese stuffed hot peppers or 6 hot poppers
  • 2 1/2 cups french style green beans
  • 1 bag tortellini, cheese stuffed
  • 1/2 bag beef tortellini (optional)

How To Make stuffed hot popper beefy soup w/tortellinis

  • Step 1
    Set crockpot to high. In a pot on stovetop brown ground beef with onions, peppers and garlic. Drain most of fat leaving a few tablespoons for flavor.
  • Step 2
    Add to crockpot. Add gravy, dry soup mix and water stir. Slow cook for 2 hours.
  • Step 3
    Turn crock pot to low. Chop and add hot poppers. Add green beans, salt and pepper. Continue to slow cook for 3 hours. Boil tortellinis in salted water, til done. Add half to soup and stir. Ready to serve. Tortellinis for side to be added in as needed. I also cooked 1/2 bag beef tortellini, for next day.
