smoked sausage and kale soup
My daughter cooks with kale all the time. I thought I would try it when I saw that the grocery store had it on sale. So I made this soup. It turned out so good, especially the next day. I will be cooking with it more often.

Ingredients
- 2 tablespoons olive oil, light
- 2 cups seasoning vegetables blend, onions, celery and peppers
- 3 cloves garlic, chopped
- 1/8 teaspoon red pepper flakes
- 3 cups chicken broth, low salt
- 2 cups water
- 1 - bay leaf
- 2 tablespoons worcestershire sauce
- 1 can chick peas
- 1 - parmesan cheese rind.
- 2 cups fresh kale, chopped or torn into bite size pieces
- 1 pound smoked sausage,sliced
- 1 tablespoon soy sauce
- 1/2 teaspoon oregano, dried
How To Make smoked sausage and kale soup

Step 1In a large pot or dutch oven, brown sausage in olive oil. Remove and set aside. Add the vegetable seasoning blend, salt , pepper and cook until soft. Add garlic and red pepper flakes to cook for a minute more.

Step 2Pour in chicken stock and water. Add bay leaf, chick peas, Parmesan rind, and Worcestershire. Bring to a boil cover and reduce heat. Simmer for 50 minutes.

Step 3Remove Parmesan rind. Stir in kale, add sausage, oregano and soy sauce. Continue simmering for additional 15 minute. Taste to add salt and pepper.
