A thick hearty soup that we have often in the cooler months. Serve with a few crackers or buttermilk biscuits. This soup freezes well.

Ingredients

  • - 1 pound hamburger, browned and drained
  • - 1 small onion, chopped
  • - 1 clove of garlic, chopped
  • - 2 carrots sliced
  • - 2 stalks celery, sliced
  • - 2 cups of fresh green beans, or 1 (14.5 ounce) can of green beans; drained
  • - 2 large yukon gold potatoes, cubed
  • - 1 quart of organic beef stock
  • - ¼ cup of barley or rice
  • - 1 bay leaf
  • - 1 teaspoon of fresh thyme, chopped
  • - 1 teaspoon salt, more or less to your taste
  • - 1/8 teaspoon of pepper

How To Make hamburger soup

  • Step 1
    In a large stockpot, brown the hamburger, and drain. Add the onion and garlic and cook until tender
  • Step 2
    Add the remaining ingredients and heat to boiling. Reduce heat and cover; simmer for 15-20 minutes or until vegetables are tender. Remove bay leaf before serving.
