A thick hearty soup that we have often in the cooler months. Serve with a few crackers or buttermilk biscuits. This soup freezes well.

Ingredients
- - 1 pound hamburger, browned and drained
- - 1 small onion, chopped
- - 1 clove of garlic, chopped
- - 2 carrots sliced
- - 2 stalks celery, sliced
- - 2 cups of fresh green beans, or 1 (14.5 ounce) can of green beans; drained
- - 2 large yukon gold potatoes, cubed
- - 1 quart of organic beef stock
- - ¼ cup of barley or rice
- - 1 bay leaf
- - 1 teaspoon of fresh thyme, chopped
- - 1 teaspoon salt, more or less to your taste
- - 1/8 teaspoon of pepper

Step 1In a large stockpot, brown the hamburger, and drain. Add the onion and garlic and cook until tender

Step 2Add the remaining ingredients and heat to boiling. Reduce heat and cover; simmer for 15-20 minutes or until vegetables are tender. Remove bay leaf before serving.
