Ingredients
- 1 pound ground beef
- 1 large onion minced
- 3/4 cup carrots minced
- 3/4 cup celery diced
- 1 teaspoon basil
- 1 teaspoon parsley
- 4 tablespoons butter
- 3 cups chicken broth
- 4 cups potatoes cubed
- 1/4 cup all purpose flour
- 2 cups cheddar cheese (or velveeta) cubed
- 1 1/2 cups milk
- 1/4 cup sour cream (optional or add on top of bowl)
How To Make cheeseburger soup

Step 1IN A LARGE POT, MELT 1 TABLESPOON BUTTER OR MARGARINE OVER MEDIUM HEAT: COOK AND STIR VEGETABLES AND BEEF , UNTIL BEEF IS BROWN.

Step 2STIR IN BASIL AND PARSLEY. ADD BROTH AND POTATOES. BRING TO A BOIL, THEN SIMMER UNTIL POTATOES ARE TENDER, ABOUT 10-12 MINUTES.

Step 3MELT THE REMAINDER OF BUTTER AND STIR IN FLOUR. ADD THE MILK, STIRRING UNTIL SMOOTH. ADD CHEESE AND STIR UNTIL MELTED.

Step 4GRADUALLY ADD MILK MIXTURE TO THE SOUP, STIRRING CONSTANTLY. BRING TO A BOIL AND REDUCE HEAT TO SIMMER. ADD SOUR CREAM(optional) AND HEAT THROUGH. DO NOT BOIL.

Step 5ADDITIONAL SIDES THAT YOU CAN PUT ON TOP OF YOUR BOWL OF SOUP: DICED PICKLES, ONIONS, LETTUCE AND TOMATOES OR ANYTHING YOU WOULD PUT ON A CHEESEBURGER….
