    ground beef
  • 1 large
    white potato, peeled and diced
  • 1 medium
    tomato, diced
  • 1 medium
  • 5
    baby portebello mushrooms, sliced
  • 1 stalk(s)
    celery, destringed and sliced
  • 3 large
    carrots, peeled and sliced
  • 6
    scallions, sliced (mostly whites with a little green)
  • 1 medium
    ear of corn, kernels cut from cob
  • 1 small
    bunch broccoli, chopped
  • 2 can(s)
    beef broth
  • 1 1/2 c
    uncooked egg noodles
  • 1 Tbsp
  • 1/2 tsp
    garlic powder
  • 1 tsp
    curry powder

How to Make Beef Vegetable Soup


  1. In a skillet, brown the ground beef.
  2. Place cooked beef and all other ingredients in a large pot. Add water to cover.
  3. Simmer for 30 minutes or until vegetables are cooked.
