This is a great soup for those cool fall days.

Ingredients

  • 1 pound ground beef
  • 1 large white potato, peeled and diced
  • 1 medium tomato, diced
  • 1 medium turnip
  • 5 - baby portebello mushrooms, sliced
  • 1 stalk celery, destringed and sliced
  • 3 large carrots, peeled and sliced
  • 6 - scallions, sliced (mostly whites with a little green)
  • 1 medium ear of corn, kernels cut from cob
  • 1 small bunch broccoli, chopped
  • 2 cans beef broth
  • 1 1/2 cups uncooked egg noodles
  • 1 tablespoon parsley
  • 1/2 teaspoon garlic powder
  • 1 teaspoon curry powder

How To Make beef vegetable soup

  • Step 1
    In a skillet, brown the ground beef.
  • Step 2
    Place cooked beef and all other ingredients in a large pot. Add water to cover.
  • Step 3
    Simmer for 30 minutes or until vegetables are cooked.
