Ingredients
- 1 cup chopped onions
- 2 - medium carrots, thinly diced
- 1/2 cup finely chopped celery
- 2 cloves minced garlic
- 1 cup finely chopped kale
- 1 cup diced potatoes
- 1-8 oz. can pumpkin puree
- 2 tablespoons olive oil
- 1/4 pound diced ham
- 1/2 teaspoon dried parsley
- 1 teaspoon salt or accent
- 3/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (opt.)
- 1 - bay leaf
- 1 pound dried split green peas
- 8 cups water or chicken broth
- - (i used a combination or water, goya chicken bouillon packets, and vegetable flavor enhancer to make 8 cups of flavored broth.)
How To Make split pea plus soup

Step 1In a large pot, sauté onions, garlic, celery and carrots in olive oil until the vegetables start to soften. Add potatoes and kale and cook a little longer.

Step 2Rinse and sort through the split peas.

Step 3Add the peas and the remainder of the ingredients, except the pumpkin. Bring to a boil.

Step 4Turn down the heat and simmer for about an hour. Stir in the pumpkin and continue simmering for another hour to an hour an a half until it gets as thick as you like it.

Step 5Stir frequently while cooking so it doesn't stick or burn on the bottom.
