How to Make Split Pea Plus Soup
- In a large pot, sauté onions, garlic, celery and carrots in olive oil until the vegetables start to soften. Add potatoes and kale and cook a little longer.
- Rinse and sort through the split peas.
- Add the peas and the remainder of the ingredients, except the pumpkin. Bring to a boil.
- Turn down the heat and simmer for about an hour. Stir in the pumpkin and continue simmering for another hour to an hour an a half until it gets as thick as you like it.
- Stir frequently while cooking so it doesn't stick or burn on the bottom.
