Split pea soup with a few healthy additions.

Ingredients

  • 1 cup chopped onions
  • 2 - medium carrots, thinly diced
  • 1/2 cup finely chopped celery
  • 2 cloves minced garlic
  • 1 cup finely chopped kale
  • 1 cup diced potatoes
  • 1-8 oz. can pumpkin puree
  • 2 tablespoons olive oil
  • 1/4 pound diced ham
  • 1/2 teaspoon dried parsley
  • 1 teaspoon salt or accent
  • 3/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (opt.)
  • 1 - bay leaf
  • 1 pound dried split green peas
  • 8 cups water or chicken broth
  • - (i used a combination or water, goya chicken bouillon packets, and vegetable flavor enhancer to make 8 cups of flavored broth.)

How To Make split pea plus soup

  • Step 1
    In a large pot, sauté onions, garlic, celery and carrots in olive oil until the vegetables start to soften. Add potatoes and kale and cook a little longer.
  • Step 2
    Rinse and sort through the split peas.
  • Step 3
    Add the peas and the remainder of the ingredients, except the pumpkin. Bring to a boil.
  • Step 4
    Turn down the heat and simmer for about an hour. Stir in the pumpkin and continue simmering for another hour to an hour an a half until it gets as thick as you like it.
  • Step 5
    Stir frequently while cooking so it doesn't stick or burn on the bottom.
