smoked pork necks w/pinto beans soup
My husband loves bean soup, so I went into my herb garden and brought in a few. I then looked to see what vegies I had. This is what I came up with. My husband said it was the best he's ever had!

Ingredients
- 2 cups dried pinto beans, soaked over night in 1 tsp baking soda and then rinsed well
- 3 small smoked pork necks
- 1 large onion, cut into 8ths
- 3 cloves garlic, minced
- 1/2 medium green bell pepper, chopped
- 1/2 medium red bell pepper, chopped
- 10-12 - baby carrots
- - fresh ground pepper
- - celery seed
- 3 cups chicken broth
- 1 cup water
- FRESH HERBS (IF AN HERB IS STRONG I USE LESS, IF AN HERB IS LIGHT I USE MORE)
- - fresh sage, tarragon, parsley, oregano, rosemary, thyme, chives and mint, chopped
How To Make smoked pork necks w/pinto beans soup

Step 1Place beans and pork necks in a 4 qt slow cooker

Step 2Add onion, garlic, bell peppers, and baby carrots

Step 3Add fresh ground pepper and celery seed

Step 4Add fresh herbs and pour broth and water over the top

Step 5Cover and cook on low for 10-12 hours or on high 5-6 hours (Great served with cornbread)
