Ingredients

  • 2 cups red lentils
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 cup bulgur wheat
  • 1/2 teaspoon ground cumin
  • 1 teaspoon dried parsley
  • 1 teaspoon chili powder
  • 2 ounces 32 oz cans vegetable broth
  • 2 - cubes knorr vegetable broth
  • 1 tablespoon lemon juice
  • - salt and pepper to taste

How To Make red lentil and vegetable soup recipe

  • Step 1
    1.Heat oil in Dutch oven over medium high heat then sauté onion and garlic, about 3 minutes. Pour in vegetable broth and stir in lentils, bulgur, cumin, parsley and chili powder.
  • Step 2
    2.Bring soup to boil; reduce heat and simmer 25-30 minutes or until lentils are tender.
  • Step 3
    3.Stir in lemon juice and bouillon cubes, continue cooking about 5 minutes. Add salt and pepper to taste 4.Enjoy!
