    red lentils
  • 1 medium
    yellow onion, diced
  • 3 clove
    garlic, minced
  • 2 Tbsp
    olive oil
  • 1/2 c
    bulgur wheat
  • 1/2 tsp
    ground cumin
  • 1 tsp
    dried parsley
  • 1 tsp
    chili powder
  • 2 oz
    32 oz cans vegetable broth
  • 2
    cubes knorr vegetable broth
  • 1 Tbsp
    lemon juice
  • ·
    salt and pepper to taste

How to Make red lentil and vegetable soup recipe


  1. 1.Heat oil in Dutch oven over medium high heat then sauté onion and garlic, about 3 minutes. Pour in vegetable broth and stir in lentils, bulgur, cumin, parsley and chili powder.
  2. 2.Bring soup to boil; reduce heat and simmer 25-30 minutes or until lentils are tender.
  3. 3.Stir in lemon juice and bouillon cubes, continue cooking about 5 minutes. Add salt and pepper to taste
