Ingredients

2 c
red lentils
1 medium
yellow onion, diced
3 clove
garlic, minced
2 Tbsp
olive oil
1/2 c
bulgur wheat
1/2 tsp
ground cumin
1 tsp
dried parsley
1 tsp
chili powder
2 oz
32 oz cans vegetable broth
2
cubes knorr vegetable broth
1 Tbsp
lemon juice
salt and pepper to taste

Step-by-Step

  • 11.Heat oil in Dutch oven over medium high heat then sauté onion and garlic, about 3 minutes. Pour in vegetable broth and stir in lentils, bulgur, cumin, parsley and chili powder.
  • 22.Bring soup to boil; reduce heat and simmer 25-30 minutes or until lentils are tender.
  • 33.Stir in lemon juice and bouillon cubes, continue cooking about 5 minutes. Add salt and pepper to taste
