Ingredients
- 2 cups red lentils
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1/2 cup bulgur wheat
- 1/2 teaspoon ground cumin
- 1 teaspoon dried parsley
- 1 teaspoon chili powder
- 2 ounces 32 oz cans vegetable broth
- 2 - cubes knorr vegetable broth
- 1 tablespoon lemon juice
- - salt and pepper to taste

Step 11.Heat oil in Dutch oven over medium high heat then sauté onion and garlic, about 3 minutes. Pour in vegetable broth and stir in lentils, bulgur, cumin, parsley and chili powder.

Step 22.Bring soup to boil; reduce heat and simmer 25-30 minutes or until lentils are tender.

Step 33.Stir in lemon juice and bouillon cubes, continue cooking about 5 minutes. Add salt and pepper to taste 4.Enjoy!
