red beans & smoked sausage
A dish I threw together today, for my other half. It's been cooking the biggest part of the day in my crock pot, and boy does it smell good...He tasted it, and gave me the thumbs up! :) Enjoy!

Ingredients
- 1 pound dried red beans
- 4 cups water
- 3 cups chicken broth
- 3 tablespoons cajun seasoning
- 1 - pepper,chopped ~ red or green
- 1 large onion, chopped
- 3 stalks celery, chopped
- 1 1/2 teaspoons garlic powder
- 2 cloves minced, garlic
- 1 pound smoked sausage, sliced
- salt - & pepper ~ optional, the cajun seasoning is pretty salty
- Hot - cooked rice
How To Make red beans & smoked sausage

Step 1Place everything in crock pot and cook on high for 7 - 7 1/2 hours, or until beans are tender. The last 30 minutes, I added 1/2 cup Basmati rice. Just to thicken some. You can either add the rice like I did, or serve over hot cooked rice.
