There is a mexican restaurant we go to that serves soup with their meals. I tried to duplicate their bean soup & must say, I did a pretty good job of it! Hope you enjoy!

Ingredients For mexican bean soup

  • 1 can
    15.5 oz. black beans
  • 1 can
    15.5 oz. pinto beans
  • 4 can
    water (i just filled one of the bean cans)
  • 3
    strips bacon
  • 2 tsp
    italian seasoning
  • 1 1/2 Tbsp
    cilantro, dried
  • 1 Tbsp
    sugar
  • 2 Tbsp
    valentina extra hot salsa picante
  • 2 tsp
    salt
  • 1 1/2 c
    fresh spinach, chopped
  • 1
    packet lipton onion soup mix
  • 2 tsp
    parsley flakes

How To Make mexican bean soup

  • 1
    Combine all ingredients in the crock pot/slow cooker & cook on high for about 6 - 7 hours, stirring occasionaly.
