This is one of Mark's Polish family recipes, they ate cold in between courses on those big family meals.

Ingredients

  • 3 pints cherries, pitted
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon cloves, cracked
  • 4 cups water
  • 1 teaspoon cornstarch
  • 1 tablespoon cold water
  • 1/2 cup brown sugar
  • 3/4 cup sour cream
  • croutons

How To Make zupa wisniowa (cherry soup), mark's

  • Step 1
    Into a medium saucepan, add the 4 cups of water and bring to a boil. Add the cherries, cinnamon and cloves Return to a boil, then drop the heat to simmer. Simmer 15 minutes Remove from the pan Rub the mix through a seive (Pureeing with a blender works equally well here) Return it to the pan. Add the cornstarch mixed with the cold water. Bring the mixture back to a boil, slowing adding the sugar. Cool thoroughly. (I prefer a stint in the freezer to make it really cold) Garnish each serving with 1-2 tablespoons of sour cream Serve with croutons after the main course.
