Ingredients
- 7 cups chicken broth, homemade or canned
- 2 tablespoons flour
- 1 tablespoon butter, softened
- 1 lemon, peeled, sliced thin (take out seeds)
- 2 tablespoons lemon juice
- 3 cups rice, cooked
- 1/2 cup sour cream

Step 1Bring the broth to a boil. Mix the flour with the butter. Add a few spoons of hot broth, mixing thoroughly. Add back to the broth, and bring to a boil Remove from heat. Add lemon, juice, rice and sour cream.

Step 2Notes: The original recipe calls for rice, but the truth of it is that I remember this being served clear as often as not. If served as a broth, sprinkle with a little white pepper and dill for flavor. As a broth, it's good for cold raw days and cold, raw throats. The original portions always struck me as ambitious in the extreme. Halving it gives you three or four truly hearty bowls.
