wild rice soup

Another easy recipe for us "lightly salted" gals! I made this one last night and it was gone before we all sat down around the table. I found myself adding about double the carrots, ham, and almonds. It amazing, but the crunchiest soup ever. I think next time I will leave out all the almonds. Like I said.... lightly salted.... YUMMY!

Ingredients
- 6 tablespoons butter
- 1 small minced onion
- 1/2 cup flour
- 3 cups chicken broth
- 2 cups cooked wild rice
- 1/2 cup finely grated carrots
- 1/3 cup minced ham
- 1/2 teaspoon salt
- 1 cup 1/2 and 1/2
- 3 tablespoons chopped slivered almonds
How To Make wild rice soup

Step 1In a saucepan, melt butter and saute onion until tender. Blend in flour, and gradually add the broth. Cook, stirring CONSTANTLY, until mixture comes to a boil.

Step 2Stir in rice, carrots, ham, almonds and salt. Simmer for about 5 minutes.

Step 3Stir in 1/2 and 1/2, and heat to serving temperature. TAH DAH!
