Another easy recipe for us "lightly salted" gals! I made this one last night and it was gone before we all sat down around the table.
I found myself adding about double the carrots, ham, and almonds. It amazing, but the crunchiest soup ever. I think next time I will leave out all the almonds. Like I said.... lightly salted....

Ingredients

  • 6 Tbsp
    butter
  • 1 small
    minced onion
  • 1/2 c
    flour
  • 3 c
    chicken broth
  • 2 c
    cooked wild rice
  • 1/2 c
    finely grated carrots
  • 1/3 c
    minced ham
  • 1/2 tsp
    salt
  • 1 c
    1/2 and 1/2
  • 3 Tbsp
    chopped slivered almonds

How to Make Wild Rice Soup

Step-by-Step

  1. In a saucepan, melt butter and saute onion until tender. Blend in flour, and gradually add the broth. Cook, stirring CONSTANTLY, until mixture comes to a boil.
  2. Stir in rice, carrots, ham, almonds and salt. Simmer for about 5 minutes.
  3. Stir in 1/2 and 1/2, and heat to serving temperature. TAH DAH!
