Another easy recipe for us "lightly salted" gals! I made this one last night and it was gone before we all sat down around the table.
I found myself adding about double the carrots, ham, and almonds. It amazing, but the crunchiest soup ever. I think next time I will leave out all the almonds. Like I said.... lightly salted....

minced onion
1/2 c
3 c
chicken broth
2 c
cooked wild rice
1/2 c
finely grated carrots
1/3 c
minced ham
1/2 tsp
1 c
1/2 and 1/2
3 Tbsp
chopped slivered almonds

How to Make Wild Rice Soup


  • 1In a saucepan, melt butter and saute onion until tender. Blend in flour, and gradually add the broth. Cook, stirring CONSTANTLY, until mixture comes to a boil.
  • 2Stir in rice, carrots, ham, almonds and salt. Simmer for about 5 minutes.
  • 3Stir in 1/2 and 1/2, and heat to serving temperature. TAH DAH!
