I love avocados! Found this in Quick Soups and Salads by Duncan and Patrick. (Cook time is actually chill time.)

Ingredients

  • 2 - avocados, peeled & mashed
  • 3 cups chicken stock
  • 1 tablespoon green onions, chopped
  • 1/2 - lime - juice of
  • - hot pepper sauce, to taste
  • - salt and white pepper, to taste
  • - sour cream and salsa to serve
  • - cilantro for garnish, if desired

How To Make velvet avocado soup

  • Step 1
    Blend all ingredients except for sour cream and salsa.
  • Step 2
    Chill until ready to serve.
  • Step 3
    Add a dollop of sour cream and some salsa to each serving. Garnish with cilantro.
