I love avocados! Found this in Quick Soups and Salads by Duncan and Patrick. (Cook time is actually chill time.)

    avocados, peeled & mashed
  • 3 c
    chicken stock
  • 1 Tbsp
    green onions, chopped
  • 1/2
    lime - juice of
  • ·
    hot pepper sauce, to taste
  • ·
    salt and white pepper, to taste
  • ·
    sour cream and salsa to serve
  • ·
    cilantro for garnish, if desired

How to Make Velvet Avocado Soup

Step-by-Step

  1. Blend all ingredients except for sour cream and salsa.
  2. Chill until ready to serve.
  3. Add a dollop of sour cream and some salsa to each serving.
    Garnish with cilantro.
