Ingredients
- 1/4 cup miso paste
- 2 tablespoons rice vinegar
- 6 cups vegetable stock
- 6 ounces ramen noodles
- 1 small jalapeno seeded and diced
- 1 cup spinach leaves
- 1/2 large red onion sliced
- 8 ounces shiitake mushrooms sliced
- 1 bunch enoki mushrooms trimmed
- 1 bunch scallions diced
- 1/2 cup cilantro chopped
How To Make vegetable miso ramen

Step 1Place the miso paste, rice vinegar, and broth into large pot. Bring to a boil and let miso paste dissolve. Reduce to a simmer. Add the ramen noodles and cook 3 minutes.

Step 2Add the remaining ingredients except cilantro. Simmer 3 more minutes. Ladle into bowls and garnish with cilantro.
