Ingredients For vegetable miso ramen

  • 1/4 c
    miso paste
  • 2 Tbsp
    rice vinegar
  • 6 c
    vegetable stock
  • 6 oz
    ramen noodles
  • 1 sm
    jalapeno seeded and diced
  • 1 c
    spinach leaves
  • 1/2 lg
    red onion sliced
  • 8 oz
    shiitake mushrooms sliced
  • 1 bunch
    enoki mushrooms trimmed
  • 1 bunch
    scallions diced
  • 1/2 c
    cilantro chopped

How To Make vegetable miso ramen

  • 1
    Place the miso paste, rice vinegar, and broth into large pot. Bring to a boil and let miso paste dissolve. Reduce to a simmer. Add the ramen noodles and cook 3 minutes.

    Add the remaining ingredients except cilantro. Simmer 3 more minutes. Ladle into bowls and garnish with cilantro.
