When my hubby sampled some while it was simmering, he said "oh my goodness, this stuff is fantastic !" I agree with him !

Ingredients

  • 2 pounds ground beef
  • oil for sauteing
  • 6 potatoes, diced
  • 3 stalks celery, diced
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 10 in small bag frozen green beans
  • 1 small bag frozen corn
  • 5 cups beef broth plus more if you desire.
  • 2 cups water
  • 2-14oz cans stewed tomatoes
  • 2 bay leaves

How To Make vegetable beef soup

  • Step 1
    Heat oil in large stock pan. Add beef and brown. Remove from pan, set aside.
  • Step 2
    Add more oil to same pot. Add celery, onions, potatoes and garlic. Sauteed until onions are translucent.
  • Step 3
    Add beef back into pot. Pour in beef broth, water, stewed tomatoes, beans, corn and bay leaves.
  • Step 4
    Bring to a boil, reduce heat to simmer. Cover and simmer 1 hour. Remove bay leaves, serve
