Full of delicious Mexican spice flavors, this soup will leave you feeling satisfied and happy. I double the recipe for company and it's always such a hit!

Ingredients

  • 2 - chicken breasts, diced
  • 2 tablespoons taco seasoning (see recipe on my pg) or 1 pkg taco seasoning mix
  • 2 cans chicken broth
  • 1 can diced tomatoes (undrained)
  • 1/2 - onion, diced
  • 1/2 teaspoon garlic, minced
  • 1 bunch cilantro
  • 2 teaspoons butter
  • 1 can tomato sauce (8 oz)
  • 1 can corn (drained and rinsed)
  • 1 teaspoon worcestershire sauce
  • SUPPLEMENTAL TOPPINGS:
  • - shredded cheese
  • - tortilla chips
  • - avocado
  • - sour cream

How To Make tortilla soup

  • Step 1
    Boil chicken breast until no pink remains. Remove, cool, and dice.
  • Step 2
    In a large pot heat butter and saute onions and garlic. Add broth, diced tomatoes, tomato sauce, worcestershir sauce and taco seasoning. Chop cilantro and add to pot. Drain canned corn and add to pot. Add diced chicken. Heat to boil, reduce heat and cook 15 minutes before serving.
  • Step 3
    Top with supplemental toppings if desired.
