Ingredients
- 2 cans diced italian style tomatoes
- 1 package fresh or frozen tortellini
- 1 box 32 oz vegetable broth
- 1 package baby spinach
- 1 pound sweet italian sausage
- 1/2 tablespoon italian seasoning
- 1 can chopped portabella mushrooms
- 1-2 clove garlic thinly sliced
- 1 small yellow onion, chopped
- 1 package 8 oz cream cheese, cubed
How To Make tortellini soup

Step 1Crock pot version: Brown sausage with onion and garlic. Put all ingredients in crock pot except spinach. Cook on low 5-6 hours. Add spinach right before serving.

Step 2Stove top version: In a large pot brown sausage, onion and garlic. Add all other ingredients except spinach. Cook on low flame or setting until tortellini is thoroughly cooked. Add spinach right before serving.

Step 3NOTE: Can use whatever tortellini you would like. Can also use chicken stock or beef stock. Meat can also be changed, maybe meatballs or chicken, just be sure that it is cooked before adding to soup.
