olive oil
kielbasa sliced
6 c
chicken broth
28 oz
tomato crushed
2 pkg
tortellini, cheese stuffed (9oz) refrig.
19 oz
can kidney beans rinsed and drained
1 medium
onion diced
2 clove
garlic minced
1/4 tsp
basil, dried
ground pepper to taste
2 c
baby spinach chopped
1/4 c
parmesan cheese


1Heat broth in a large stock pot.
In a small fry pan heat olive oil, add onions and garlic and saute' till the onions are golden brown. Add these to hot broth, add tomatoes, beans, seasonings.
2Heat soup to boiling over medium high heat, stirring occasionally. Add tortellini's and reduce heat to simmer, add kielbasas, cook soup for 5 minutes or till the tortellini is done, stir in the spinach and sprinkle the Parmesan cheese in each bowl.
3Serve with a good crusty bread. ENJOY
