This is another great recipe we make at the Romero's house, hope you try it and enjoy. Ingredients

  • 2 tablespoons olive oil
  • 1 - kielbasa sliced
  • 6 cups chicken broth
  • 28 ounces tomato crushed
  • 2 packages tortellini, cheese stuffed (9oz) refrig.
  • 19 ounces can kidney beans rinsed and drained
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1/4 teaspoon basil, dried
  • - ground pepper to taste
  • 2 cups baby spinach chopped
  • 1/4 cup parmesan cheese

How To Make tortellini soup

  • Step 1
    Heat broth in a large stock pot. In a small fry pan heat olive oil, add onions and garlic and saute' till the onions are golden brown. Add these to hot broth, add tomatoes, beans, seasonings.
  • Step 2
    Heat soup to boiling over medium high heat, stirring occasionally. Add tortellini's and reduce heat to simmer, add kielbasas, cook soup for 5 minutes or till the tortellini is done, stir in the spinach and sprinkle the Parmesan cheese in each bowl.
  • Step 3
    Serve with a good crusty bread. ENJOY
