Ingredients
- 2 tablespoons olive oil
- 1 small red onion, chopped
- salt
- 6 cloves garlic, minced
- 1 cup white wine
- 8 plum tomatoes, chopped
- 2 cups tomato juice
- 2 cups Italian bread, crust removed and cut into cubes
- 1 bunch basil, half chiffonade
- 1/2 cup shredded Parmesan cheese
How To Make tomato bread soup

Step 1Add the olive to a large pot and add the onions. Add some salt and simmer until the onions are soft, about 10 minutes.

Step 2Toss in the garlic and cook 2 more minutes. Add the wine and let most evaporate.

Step 3Add the tomatoes and cook for about 15 minutes, breaking them up. Toss in the whole basil leaves.

Step 4In batches, puree the tomato mixture in a food processor.

Step 5Add it back to the pan and add the tomato juice and bread. Cook for about 20 minutes until the soup is very thick.

Step 6Serve with Parmesan cheese and garnish with the chiffonade basil.
