This seems weird but tastes really good. It's a thick soup.

Ingredients

  • 2 tablespoons olive oil
  • 1 small red onion, chopped
  • salt
  • 6 cloves garlic, minced
  • 1 cup white wine
  • 8 plum tomatoes, chopped
  • 2 cups tomato juice
  • 2 cups Italian bread, crust removed and cut into cubes
  • 1 bunch basil, half chiffonade
  • 1/2 cup shredded Parmesan cheese

How To Make tomato bread soup

  • Step 1
    Add the olive to a large pot and add the onions. Add some salt and simmer until the onions are soft, about 10 minutes.
  • Step 2
    Toss in the garlic and cook 2 more minutes. Add the wine and let most evaporate.
  • Step 3
    Add the tomatoes and cook for about 15 minutes, breaking them up. Toss in the whole basil leaves.
  • Step 4
    In batches, puree the tomato mixture in a food processor.
  • Step 5
    Add it back to the pan and add the tomato juice and bread. Cook for about 20 minutes until the soup is very thick.
  • Step 6
    Serve with Parmesan cheese and garnish with the chiffonade basil.
