Ingredients
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 5 cloves garlic, minced
- 1 knob ginger, grated
- 2 tablespoons fish sauce
- red curry paste
- 3 tablespoons brown sugar
- 1 tablespoon Better than Bouillon lobster base
- 3 cups water
- 1 can coconut milk (14 oz)
- 1 cup spinach
- 1 cup bean sprouts
- 1 cup calamari
- 1 lime, juiced
- 1 1/2 cups rice noodles, cooked and drained
- cilantro, for garnish
How To Make thai coconut red curry with calamari

Step 1Heat oil in a pot. Add the onion, garlic, and ginger and cook until softened. Add the fish sauce, red curry paste, and brown sugar. Mix the lobster base with the water and pour over the curry mixture.

Step 2Cook for about 10 minutes. Add the coconut milk, spinach, bean sprouts, and calamari. Cook 2 minutes. Add the lime juice and noodles.

Step 3Cook 2 more minutes. Garnish with cilantro.
