Ingredients
- 1 chicken carcass
- 5 chicken wings
- 3 inch piece galangal, thinly sliced
- 2 stalks lemongrass, bruised
- 3 kaffir lime leaves
- 4 cloves garlic
- 1 large shallot, cut in half
- 2 Thai chilies
- 8 cups water
How To Make thai chicken stock

Step 1Rince the chicken in a large pot of water and bring to a simmer for about 5 minutes, removing the scum.

Step 2Drain the chicken and place it in an Instant Pot with the water and all ingredients. Secure the lid and pressure cook on high for 1 hour. Then quick release.

Step 3Strain through cheesecloth and discard the solids.
