This is a great stock to use for Thai dishes.

Ingredients

  • 1 chicken carcass
  • 5 chicken wings
  • 3 inch piece galangal, thinly sliced
  • 2 stalks lemongrass, bruised
  • 3 kaffir lime leaves
  • 4 cloves garlic
  • 1 large shallot, cut in half
  • 2 Thai chilies
  • 8 cups water

How To Make thai chicken stock

  • Step 1
    Rince the chicken in a large pot of water and bring to a simmer for about 5 minutes, removing the scum.
  • Step 2
    Drain the chicken and place it in an Instant Pot with the water and all ingredients. Secure the lid and pressure cook on high for 1 hour. Then quick release.
  • Step 3
    Strain through cheesecloth and discard the solids.
