Texas Busy Day Soup

Victoria Wilson

Got this from my sister-in-law, who got it from someone else, etc.

Another name for it is Velveeta Chicken Tortilla Soup (minus the tortillas).

You could use any meat. I prefer the Costco Kirkland canned chicken.

How to Make Texas Busy Day Soup

  • 1Combine first 7 ingredients and warm up. Add cubed Velveeta a little at a time, to keep it from burning, and cook on low heat until Velveeta is completely melted.
  • 2This makes a really large pot of soup. I used my crock pot on low. If you want it a little runny, use more liquids from the ingredients. If you like it a little thicker, use less liquid from the ingredients.

It also tends to be a little salty, so you can use no salt added vegetables and low fat Velveeta.
