Ingredients

  • 1 1/2 pounds boneless pork shoulder -- cut into bite size cubes
  • 3 to 4 medium red potatoes -- cut into 1in. cubes
  • 1 (8 oz) can green chili peppers
  • 1 medium red bell pepper -- diced
  • 1 medium green bell pepper -- diced
  • 1 medium purple onions -- diced
  • 1 (15 oz) can diced tomatoes
  • 1 cup vegetable broth
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • 1 clove garlic -- minced
  • 1 teaspoon fresh ground black pepper
  • 1 teaspoon cumin
  • 1 tablespoon adobo seasoning
  • 2 teaspoons cilantro -- dried

How To Make tex-mex pork stew

  • Step 1
    Heat olive oil in a skillet and brown your pork.
  • Step 2
    Layer all of the ingredients in crock pot and stir well.
  • Step 3
    Cover and cook until meat is tender for about 6 to 8 hours.
