- 1 medium purple onions -- diced
- 1 (15 oz) can diced tomatoes
- 1 cup vegetable broth
- 2 tablespoons apple cider vinegar
- 2 tablespoons olive oil
- 1 clove garlic -- minced
- 1 teaspoon fresh ground black pepper
- 1 teaspoon cumin
- 1 tablespoon adobo seasoning
- 2 teaspoons cilantro -- dried
