A very tasty pork stew.

Ingredients

  •   1 1/2 lb
    boneless pork shoulder -- cut into bite size cubes
  •   3 to 4 medium
    red potatoes -- cut into 1in. cubes
  •   1 (8 oz) can(s)
    green chili peppers
  •   1 medium
    red bell pepper -- diced
  •   1 medium
    green bell pepper -- diced
  •   1 medium
    purple onions -- diced
  •   1 (15 oz) can(s)
    diced tomatoes
  •   1 c
    vegetable broth
  •   2 Tbsp
    apple cider vinegar
  •   2 Tbsp
    olive oil
  •   1 clove
    garlic -- minced
  •   1 tsp
    fresh ground black pepper
  •   1 tsp
    cumin
  •   1 Tbsp
    adobo seasoning
  •   2 tsp
    cilantro -- dried

How To Make

  • 1
    Heat olive oil in a skillet and brown your pork.
  • 2
    Layer all of the ingredients in crock pot and stir well.
  • 3
    Cover and cook until meat is tender for about 6 to 8 hours.
