Ingredients

  • 2 - 3 teaspoons coconut oil
  • 1 cup chopped onions
  • 2 cups cubed carrots, 1/2 inch cubes
  • 3 cloves garlic, chopped (or more to taste)
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • 1 teaspoon curry powder
  • 1 teaspoon turmeric, ground
  • 1 cup red lentils
  • 1 can whole tomatoes, chopped - do not drain (28 oz)
  • 2 cups vegetable broth
  • 5 cups cubed sweet potatoes, 1-inch cubes
  • salt & pepper, to taste
  • 1 can coconut milk (optional)

How To Make sweet potato, carrot, and red lentil stew

  • Step 1
    Heat oil in a stock pot. Ten add onion, carrots, and garlic. Cover with spices and a tablespoon of water (or more) to prevent burning.
  • Step 2
    Add lentils, tomatoes, and vegetable broth and bring to a boil. Reduce the heat to medium-low, cover, and simmer approximately 10 minutes.
  • Step 3
    Add sweet potatoes and bring to a boil.
  • Step 4
    Reduce the heat again to medium-low and simmer approximately 30-40 minutes until lentils and pumpkin are tender. Season with salt and pepper to taste.
  • Step 5
    If preferred, add coconut milk toward the end of the cooking time.
