Ingredients
- 2 - 3 teaspoons coconut oil
- 1 cup chopped onions
- 2 cups cubed carrots, 1/2 inch cubes
- 3 cloves garlic, chopped (or more to taste)
- 2 teaspoons ground coriander
- 2 teaspoons ground cumin
- 1 teaspoon curry powder
- 1 teaspoon turmeric, ground
- 1 cup red lentils
- 1 can whole tomatoes, chopped - do not drain (28 oz)
- 2 cups vegetable broth
- 5 cups cubed sweet potatoes, 1-inch cubes
- salt & pepper, to taste
- 1 can coconut milk (optional)
How To Make sweet potato, carrot, and red lentil stew

Step 1Heat oil in a stock pot. Ten add onion, carrots, and garlic. Cover with spices and a tablespoon of water (or more) to prevent burning.

Step 2Add lentils, tomatoes, and vegetable broth and bring to a boil. Reduce the heat to medium-low, cover, and simmer approximately 10 minutes.

Step 3Add sweet potatoes and bring to a boil.

Step 4Reduce the heat again to medium-low and simmer approximately 30-40 minutes until lentils and pumpkin are tender. Season with salt and pepper to taste.

Step 5If preferred, add coconut milk toward the end of the cooking time.
