Ingredients

  • 4 ounces good quality sun-dried tomatoes
  • 3 cups boiling water
  • 3 cloves garlic
  • 1 can crushed tomatoes (28 oz)
  • 1 teaspoon granulated sugar
  • 1 tablespoon tomato paste
  • salt and pepper
  • 1 cup Ditalini pasta
  • 1/4 cup chopped fresh basil
  • 1/2 cup grated Parmesan cheese

How To Make sun-dried tomato pasta soup with parmesan and basil

  • Step 1
    Place the sun-dried tomatoes in a large bowl. Pour the boiling water over top and let sit for 15 minutes to soften.
  • Step 2
    Remove the sundried tomatoes to a food processor and reserve the liquid. Add the garlic to the food processor and process until chopped small.
  • Step 3
    Add the reserved water to a large pot. Add the tomato garlic mixture, crushed tomatoes, tomato paste, and sugar; bring to a boil.
  • Step 4
    Reduce heat to a simmer and simmer 20 minutes.
  • Step 5
    Add the cup of ditalini during the last 10 minutes. Season to taste with salt and pepper.
  • Step 6
    Add the basil and Parmesan cheese when serving.
