Ingredients
- 4 ounces good quality sun-dried tomatoes
- 3 cups boiling water
- 3 cloves garlic
- 1 can crushed tomatoes (28 oz)
- 1 teaspoon granulated sugar
- 1 tablespoon tomato paste
- salt and pepper
- 1 cup Ditalini pasta
- 1/4 cup chopped fresh basil
- 1/2 cup grated Parmesan cheese
How To Make sun-dried tomato pasta soup with parmesan and basil

Step 1Place the sun-dried tomatoes in a large bowl. Pour the boiling water over top and let sit for 15 minutes to soften.

Step 2Remove the sundried tomatoes to a food processor and reserve the liquid. Add the garlic to the food processor and process until chopped small.

Step 3Add the reserved water to a large pot. Add the tomato garlic mixture, crushed tomatoes, tomato paste, and sugar; bring to a boil.

Step 4Reduce heat to a simmer and simmer 20 minutes.

Step 5Add the cup of ditalini during the last 10 minutes. Season to taste with salt and pepper.

Step 6Add the basil and Parmesan cheese when serving.
