How to Make Stuffed Pepper Soup
- Saute onions in olive oil, add ground beef after onions become opaque.Add chopped green peppers last 5 minutes of beef cooking, drain grease.
- Add 1 tablespoon of allspice to pre- cooked rice.
- In a large stock pot , add the can tomatoes 28ozs , 46oz V-8, salt and broth,and begin simmering , add drained ground beef , onions, chopped green peppers,and rice as soon as finished with above prep, let whole mixture simmer 20 minutes to combine flavors.
- This is optional , but I use canned sliced potatoes warm sliced potatoes just before serving,place warm potatoes into bowl add ladled soup and top with a spoonful of Sour Cream.
