My husband came up with this recipe because he loves stuffed peppers and had tried a stuffed pepper soup at one of our local restaurants and decided he could make a better soup and he did. What makes this stuffed pepper soup stand out from the others is the Allspice!

Ingredients
- - 1 bag of instant rice (1 cup) pre-cooked 1tbs sea salt (fine ground) 1tbs allspice 1.5 pounds hamburger 2 cans of diced tomato 1 large onion 2 medium green peppers chopped 1 large can of beef broth or 4beef bullion cubes if less liquid is des
How To Make stuffed pepper soup

Step 1Saute onions in olive oil, add ground beef after onions become opaque.Add chopped green peppers last 5 minutes of beef cooking, drain grease.

Step 2Add 1 tablespoon of allspice to pre- cooked rice.

Step 3In a large stock pot , add the can tomatoes 28ozs , 46oz V-8, salt and broth,and begin simmering , add drained ground beef , onions, chopped green peppers,and rice as soon as finished with above prep, let whole mixture simmer 20 minutes to combine flavors.

Step 4This is optional , but I use canned sliced potatoes warm sliced potatoes just before serving,place warm potatoes into bowl add ladled soup and top with a spoonful of Sour Cream.
