Ingredients
- 1 cup raw shrimp peeled and deveined
- 2 cloves garlic
- 2 scallions
- 1 tablespoon each soy sauce, fish sauce, and cilantro
- 1 egg separated
- 16 wonton wrapper
- BROTH
- 6 cups chicken broth
- 1 tablespoon each, chili garlic paste, soy sauce, fish sauce and sake or rice wine
- 1/4 cup brown sugar
- fresh cilantro
How To Make spicy shrimp wonton soup

Step 1Separate the egg yolk and white. Place the shrimp, garlic, soy sauce, fish sauce, cilantro and the egg yolk in a food processor and process to a paste.

Step 2Place the egg white in a bowl. Lay our 16 wonton wrapper. Place a small amount of shrimp mixture in the middle of each wrapper. Brush the egg white around the edges. Fold the wontons into a triangle then bring the two bottom corners into the middle

Step 3For the broth add the chicken stock,, fish, sauce, soy sauce, chili garlic sauce, sake and brown sugar. Bring to a boil.

Step 4Reduce to a simmer and add the wontons. Cook about 5 minutes. Ladle into 4 bowls with 4 wontons each. Garnish with cilantro.
