spicy sausage & tortellini soup

I love spicy Italian sausage, but of course, you could make this milder by using regular sausage and reduce the hot sauce, cayenne and pepper flakes.

Ingredients

  • 12 ounces hot italian sausage, either bulk or removed from casings
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 3 tablespoons flour
  • 1 tablespoon basil, minced (or 1/2 tablespoon dried)
  • 1/2 teaspoon oregano, dried
  • 1- 2 teaspoons hot sauce, your favorite brand
  • 1 tablespoon dijon or spicy mustard or your choice
  • 1/8 teaspoon cayenne pepper, or to taste
  • 1/8 teaspoon red pepper flakes, or to taste
  • 1 cup 1/2 and 1/2
  • 5 cups chicken broth
  • 2-3 cups kale or spinach
  • 2 cups tortellini, dried or refrigerated
  • salt and pepper, to taste

How To Make spicy sausage & tortellini soup

  • Step 1
    Crumble sausage and cook with onion in a large pot until onions are translucent and sausage is cooked through.
  • Step 2
    Add garlic and cook for an additional minute, or until garlic is fragrant. Sprinkle with flour and cook for another minute or so.
  • Step 3
    Add the herbs, mustard, hot sauce and pepper.
  • Step 4
    Add broth, scraping bottom of pan. Bring to a boil, then reduce to a simmer.
  • Step 5
    Add tortellini following package directions. Add kale or spinach for the last few minutes until wilted.
  • Step 6
    Add 1/2 and 1/2, stir until warmed. Do not boil! Taste for salt and pepper.
