spicy sausage & tortellini soup
I love spicy Italian sausage, but of course, you could make this milder by using regular sausage and reduce the hot sauce, cayenne and pepper flakes.

Ingredients
- 12 ounces hot italian sausage, either bulk or removed from casings
- 1 cup onion, diced
- 3 cloves garlic, minced
- 3 tablespoons flour
- 1 tablespoon basil, minced (or 1/2 tablespoon dried)
- 1/2 teaspoon oregano, dried
- 1- 2 teaspoons hot sauce, your favorite brand
- 1 tablespoon dijon or spicy mustard or your choice
- 1/8 teaspoon cayenne pepper, or to taste
- 1/8 teaspoon red pepper flakes, or to taste
- 1 cup 1/2 and 1/2
- 5 cups chicken broth
- 2-3 cups kale or spinach
- 2 cups tortellini, dried or refrigerated
- salt and pepper, to taste
How To Make spicy sausage & tortellini soup

Step 1Crumble sausage and cook with onion in a large pot until onions are translucent and sausage is cooked through.

Step 2Add garlic and cook for an additional minute, or until garlic is fragrant. Sprinkle with flour and cook for another minute or so.

Step 3Add the herbs, mustard, hot sauce and pepper.

Step 4Add broth, scraping bottom of pan. Bring to a boil, then reduce to a simmer.

Step 5Add tortellini following package directions. Add kale or spinach for the last few minutes until wilted.

Step 6Add 1/2 and 1/2, stir until warmed. Do not boil! Taste for salt and pepper.
