Ingredients For spicy gazpacho with avocado

  • 2 c
    spicy V8 juice
  • 1 lg
    tomato, rough chop
  • 1/2 lg
    red bell pepper, rough chop
  • 1/2
    English cucumber, peeled and rough chop
  • 1/4 lg
    red onion, rough chop
  • 1
    jalapeno, seeded and chopped
  • 2 clove
    garlic
  • 1/4 c
    cilantro
  • 2 Tbsp
    white balsamic vinegar
  • 1 Tbsp
    lime juice
  • 1 Tbsp
    olive oil
  • 1/4 c
    sugar
  • 1 tsp
    celery salt
  • 1 lg
    avocado, peeled and sliced

How To Make spicy gazpacho with avocado

    Place all ingredients except the avocado in a blender.

    Plus 6 to 8 times until finely chopped, but a little chunky.

    Place in the refrigerator for at least 6 hours.

    Ladle into 4 bowls and top with avocado.
