Ingredients

  • 2 cups spicy V8 juice
  • 1 large tomato, rough chop
  • 1/2 large red bell pepper, rough chop
  • 1/2 - English cucumber, peeled and rough chop
  • 1/4 large red onion, rough chop
  • 1 - jalapeno, seeded and chopped
  • 2 cloves garlic
  • 1/4 cup cilantro
  • 2 tablespoons white balsamic vinegar
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil
  • 1/4 cup sugar
  • 1 teaspoon celery salt
  • 1 large avocado, peeled and sliced

How To Make spicy gazpacho with avocado

  • Step 1
    Place all ingredients except the avocado in a blender.
  • Step 2
    Plus 6 to 8 times until finely chopped, but a little chunky.
  • Step 3
    Place in the refrigerator for at least 6 hours.
  • Step 4
    Ladle into 4 bowls and top with avocado.
