    carrots, thinly sliced
  • 6 c
    chicken broth
  • 1 Tbsp
    butter
  • 5/8 tsp
    cumin, ground
  • 5/8 tsp
    coriander, ground
  • 5/8 tsp
    cinnamon, ground
  • 5/8 tsp
    cayenne pepper
  • pinch
    salt
  • pinch
    pepper

How to Make Spiced Carrot Soup

Step-by-Step

  1. Simmer the carrots in a heavy saucepan with 1/2 cup of the chicken broth and butter, until the carrots are tender.
  2. Put the carrots in a blender and puree; return to pan.
  3. Add the spices and stir.
  4. Add the remaining broth, salt and pepper and simmer for 20 minutes.
