Ingredients

  • 6 large carrots, thinly sliced
  • 6 cups chicken broth
  • 1 tablespoon butter
  • 5/8 teaspoon cumin, ground
  • 5/8 teaspoon coriander, ground
  • 5/8 teaspoon cinnamon, ground
  • 5/8 teaspoon cayenne pepper
  • pinch salt
  • pinch pepper

How To Make spiced carrot soup

  • Step 1
    Simmer the carrots in a heavy saucepan with 1/2 cup of the chicken broth and butter, until the carrots are tender.
  • Step 2
    Put the carrots in a blender and puree; return to pan.
  • Step 3
    Add the spices and stir.
  • Step 4
    Add the remaining broth, salt and pepper and simmer for 20 minutes.
