- 6 large carrots, thinly sliced
- 6 cups chicken broth
- 1 tablespoon butter
- 5/8 teaspoon cumin, ground
- 5/8 teaspoon coriander, ground
- 5/8 teaspoon cinnamon, ground
- 5/8 teaspoon cayenne pepper
- pinch salt
- pinch pepper
How To Make spiced carrot soup

Step 1Simmer the carrots in a heavy saucepan with 1/2 cup of the chicken broth and butter, until the carrots are tender.

Step 2Put the carrots in a blender and puree; return to pan.

Step 3Add the spices and stir.

Step 4Add the remaining broth, salt and pepper and simmer for 20 minutes.
