This recipe was given to me by a friend and co-worke some years ago. My husband loves it anytime of the year, but especially in cold weather. It is so simple and yet it is a hearty soup.

    ground beef
  • 1
    onion, chopped
  • 1
    celery stalk, chopped
  • 3 can(s)
    ranch style beans, undrained
  • 2 can(s)
    minestrone soup, no water added
  • 1 can(s)
    rotel tomatoes
  • 15 oz
    beef bouillon, canned

How to Make Southwest Soup


  1. Brown ground beef, Onion, and Celery in a 2 quart dutch oven. Add beans, soup, tomatoes, and bouillon. Stir to mix. Simmer 45 minutes.
