This is a very simple recipe. I love to take a basic recipe, change it and make it my own. This is the result of one of those changes.

  • 2 can(s)
    chicken broth
  • 4 c
  • 4-5 medium
    potatoes, cut into bite sixed pieces
  • 1/2 medium
    onion, chopped
  • 3 c
    ham, cut into bite sized pieces
  • 3 pkg
    instant sour cream and chive potatoes
  • 4 c
  • 2 c
    water, i use the potaoe water
  • 2 c
    shredded cheese
  • ·
    salt and pepper to taste

How to Make Sour Cream and Chive Potatoe Soup


  1. Boil potatoes just until tender.
  2. In separate large stock pot or dutch oven, bring chicken stock and 4 cups water to a boil. Add ham and onion. After soup comes back to a boil, add potato flakes. Soup will stiffen up like you are making mashed potatoes. Add milk and tow coups water. I use the potato water. Add potatoes. When soup is hot, add salt and pepper to taste. Add shredded cheese. Stir to melt.
