This is a very simple recipe. I love to take a basic recipe, change it and make it my own. This is the result of one of those changes.

chicken broth

4-5 medium
potatoes, cut into bite sixed pieces
1/2 medium
onion, chopped
3 c
ham, cut into bite sized pieces
3 pkg
instant sour cream and chive potatoes
4 c
2 c
water, i use the potaoe water
2 c
shredded cheese
salt and pepper to taste

How to Make Sour Cream and Chive Potatoe Soup


  • 1Boil potatoes just until tender.
  • 2In separate large stock pot or dutch oven, bring chicken stock and 4 cups water to a boil. Add ham and onion. After soup comes back to a boil, add potato flakes. Soup will stiffen up like you are making mashed potatoes. Add milk and tow coups water. I use the potato water. Add potatoes. When soup is hot, add salt and pepper to taste. Add shredded cheese. Stir to melt.
