sour cream and chive potatoe soup

This is a very simple recipe. I love to take a basic recipe, change it and make it my own. This is the result of one of those changes.

Ingredients

  • 2 cans chicken broth
  • 4 cups water
  • 4-5 medium potatoes, cut into bite sixed pieces
  • 1/2 medium onion, chopped
  • 3 cups ham, cut into bite sized pieces
  • 3 packages instant sour cream and chive potatoes
  • 4 cups milk
  • 2 cups water, i use the potaoe water
  • 2 cups shredded cheese
  • - salt and pepper to taste

How To Make sour cream and chive potatoe soup

  • Step 1
    Boil potatoes just until tender.
  • Step 2
    In separate large stock pot or dutch oven, bring chicken stock and 4 cups water to a boil. Add ham and onion. After soup comes back to a boil, add potato flakes. Soup will stiffen up like you are making mashed potatoes. Add milk and tow coups water. I use the potato water. Add potatoes. When soup is hot, add salt and pepper to taste. Add shredded cheese. Stir to melt.
