souper pizza soup
I got this idea from my best bud and posted it 1st! Serve with croutons or put a slice of garlic toast in the bottom of your bowl before the soup. Yum!

Ingredients
- 3/4 cup risotto, uncooked
- 3/4 cup onion, chopped
- 1 cup mushrooms, sliced
- 1/4 cup green pepper, chopped
- 2 - garlic cloves, minced
- 2 teaspoons olive oil
- 2 cups beef broth
- 2 cups tomato sauce
- 2 teaspoons dried basil
- 1 teaspoon oregano
- 2 ounces mozzarella cheese, shredded
How To Make souper pizza soup

Step 1In a large pot cook macaroni about 10 minutes, or until tender; drain.

Step 2Saute onion, mushrooms, green pepper and garlic in olive oil until onion is transparent.

Step 3Add beef broth, tomato sauce, basil, oregano, and cooked macaroni; simmer 10 minutes.

Step 4Ladle into bowl and top each with mozzarella.
