I got this idea from my best bud and posted it 1st! Serve with croutons or put a slice of garlic toast in the bottom of your bowl before the soup. Yum!

Ingredients

  • 3/4 cup risotto, uncooked
  • 3/4 cup onion, chopped
  • 1 cup mushrooms, sliced
  • 1/4 cup green pepper, chopped
  • 2 - garlic cloves, minced
  • 2 teaspoons olive oil
  • 2 cups beef broth
  • 2 cups tomato sauce
  • 2 teaspoons dried basil
  • 1 teaspoon oregano
  • 2 ounces mozzarella cheese, shredded

How To Make souper pizza soup

  • Step 1
    In a large pot cook macaroni about 10 minutes, or until tender; drain.
  • Step 2
    Saute onion, mushrooms, green pepper and garlic in olive oil until onion is transparent.
  • Step 3
    Add beef broth, tomato sauce, basil, oregano, and cooked macaroni; simmer 10 minutes.
  • Step 4
    Ladle into bowl and top each with mozzarella.
