Soup Season is here!!! Unique AND SOUPER Simple!!! 45 minutes stovetop start to finish. Add fresh baked bread, (frozen bread dough, thawed & risen) and a garden salad. Ingredients

  • 1/2 pound bulk italian sausage
  • 1 small diced onion
  • 2 tablespoons olive oil
  • 14 oz. cans diced tomatoes
  • 6 cups chicken o vegetable broth
  • 1/3 cup raw long grain rice
  • 1/4 cup parmesan cheese
  • 1/2 cup frozen chopped spinach

How To Make sicilian sausage and spinach soup

  • Step 1
    In a large saucepan or Dutch kettle, add olive oil, Italian sausage, and diced onion. Saute on medium heat breaking up and browning the sausage,and cooking the onion until transparent. Add canned tomatoes, chicken broth, rice and cheese. Cover and simmer for 25 minutes or until rice softens.During the last 5 minutes, add chopped spinach. Serve. Sprinkle with additional Parmesan cheese, if desired. :-)
