Received this recipe from a friend of ours in McMinneville, TN. One of the most refreshing and oh so delicious gazpacho I've ever had! An awesome addition to a hot summer meal.

  • 1/2 lb
    shrimp (cooked and deveined)
  • 5
    lemons (juice squeezed)
  • 2 1/2 c
    tomatoes (diced)
  • 1/2 c
    v-8 juice
  • 1 1/2 c
    mr. & mrs. t bloody mary mix
  • 2 c
    cucumbers (peeled, seeded and chopped)
  • 1/2 c
    onions (finely chopped)
  • 1/4 c
    parsley (minced)
  • 1/2 c
    green peppers (chopped)
  • 1 1/2 tsp
  • 1 Tbsp
    tabasco (or more to taste)
  • 1/3 c
    olive oil

How to Make Shrimp Gazpacho


  1. Cover shrimp with lemon juice. Refrigerate to chill while rest of gazpacho is being prepared (about 10-15 minutes)
  2. Combine remaining ingredients, stir to combine all ingredients evenly. Add shrimp and lemon juice, blend and ENJOY!
