Received this recipe from a friend of ours in McMinneville, TN. One of the most refreshing and oh so delicious gazpacho I've ever had! An awesome addition to a hot summer meal.

Ingredients
- 1/2 pound shrimp (cooked and deveined)
- 5 - lemons (juice squeezed)
- 2 1/2 cups tomatoes (diced)
- 1/2 cup v-8 juice
- 1 1/2 cups mr. & mrs. t bloody mary mix
- 2 cups cucumbers (peeled, seeded and chopped)
- 1/2 cup onions (finely chopped)
- 1/4 cup parsley (minced)
- 1/2 cup green peppers (chopped)
- 1 1/2 teaspoons salt
- 1 tablespoon tabasco (or more to taste)
- 1/3 cup olive oil
How To Make shrimp gazpacho

Step 1Cover shrimp with lemon juice. Refrigerate to chill while rest of gazpacho is being prepared (about 10-15 minutes)

Step 2Combine remaining ingredients, stir to combine all ingredients evenly. Add shrimp and lemon juice, blend and ENJOY!
